Fresh Cranberry Orange Scones

I have a few westerns that I'll watch, but on the whole, this is not my favorite film genre. I will watch "The Cowboys" even with commercials. I simply adore Roscoe Lee Browne as the cook! If you've ever seen this movie you know the premise, John Wayne, a rancher down on his luck for hands, hires all the local school boys and takes them on a drive. Roscoe Lee Browne is the cook and the "cowboys" are fascinated by his appearance, his voice, his stories, but mainly his cooking. One night the boys steal a bottle from the chuck wagon and proceed to get silly on it. They start talking about Jebediah Nightlinger, the cook. "That son of a b!*ch cooks better than my mother!", one of the saucy twirps utters. I love that line and have made it my own, because I cook better than my mother. Don't gasp at the truth, just embrace it. Most of us do cook better than our mothers. My mom did excel at holidays just in mere spectacle of presentation, but the woman completely cooked her turkeys to death. Thank God for her gravy because without it we would choke on holiday bird. The table settings were great, so if presentation is everything, my mom was the belle of the ball.

How does Tupperware work into it and where's the new recipe?

I made THE BEST scones ever this morning. Fresh Cranberry Orange Scones. After I glazed them we stood in the kitchen, speechlessly rolling our eyes and chomping away on their fresh-baked goodness.

I used the Saucy Silicone Spatula, my Thatsa Bowl (great high sides and wonderfully deep -- which you'll need because I tripled the recipe!!), and always my Modular Mates. Modular Mates keep my pantry organized and my staples fresh and ready to use when the Julia Child muse strikes.

FRESH CRANBERRY ORANGE SCONES

3 cups AP flour
3 teaspoons baking powder
3/4 tsp salt
3 tablespoons sugar
3/4 cup butter, chilled, cut into small pieces
3/4 cup fresh cranberries, coarsley chopped
1 cup plus four tablespoons fresh squeezed orange juice
3 teaspoons orange zest
4 tablespoons powdered sugar

Combine dry ingredients in Thatsa Bowl. With your fingers, combine the butter into the dry ingredients until you have a coarse mixture. You want some butter pieces in the dough, it will make all the difference in scone texture. Add the orange juices, cranberries and zest and combine till moist, being careful not to over mix.

Pre-heat your oven to 400 degrees. Drop scones on cookie sheet. This should make 12 good sized scones. Use parchment if you have it. If you have good cookie sheets this shouldn't be an issue. Bake for 16-18 minutes. Makes 12.

While the scones bake, use the remaining orange juice and equal part powdered sugar to make a glaze. Cook in saucepan (Why, yes, I did use my Tupperware Chef Series saucepan to cook my glaze!) till bubbly, then set aside. Place baked scones on cookie cooling rack over another baking sheet and immediately coat with glaze.

Invite family into kitchen while scones are still warm to burn incense at your feet.

I'll bet Jebediah wishes he had some Thatsa Bowls!!

LET THEM EAT CAKE!! AGAIN!!


I know, I know. Another blog about cake. But can I tell you? This is seriously the best chocolate cake for when you need your fix but don't want the fuss. It's the cake for when the girls are coming over or for when everyone has left the house. Yes, yes, yes, it's in the Tupperwave Stack Cooker! What else?!

Go get you a box of Devil's Food Cake mix (Pillsbury--Wal-Mart--88 cents!), some oil, applesauce, eggs, and a bag of Dove or some other mid-range chocolate! For Heaven's sake DON'T USE THE GODIVA (how funny--I almost typed DOGIVA!!) on this!

Lube and sugar your Tupperwave Stack Cooker (What? You don't have one of these? Help me, Jesus! Why don't you have one? Call me. Party. Free Tupperware. How easy was that? Not much easier than this cake.) Unwrap your chocolates (about 20 of them, don't be stingy, what's the point?) and layer them on the bottom of your Stack Cooker. Make your cake according the directions BUT, reduce the water to one cup and ADD ONE CUP OF APPLESAUCE. Just do it. You and your thighs will thank me later.

Put the lid to the Stack Cooker in your microwave UPSIDE DOWN. It makes a nice little stand that helps the microwaves circulate around the cake. Mix your batter, pour it in the Stack Cooker smack on top of those chocolates. Put the Stack Cooker with the thigh glue into your microwave. Cook that puppy on high for 10 minutes. TEST TEST TEST IT! Stick a stick in for goodness sake! I pulled this out at a party once and it was gooey in the center and it started collapsing! I quickly whooped everything back in the Stack Cooker and got it back into the microwave. ALL MICROWAVES ARE DIFFERENT in their power/wattage. Know your tool, ladies. Mine does the job in 10 minutes. Start at 10, add 5 minutes. That should do it even with a tired, old tool of a microwave.

LET THE CAKE COOL IN THE PAN FOR 20 MINUTES!! After 20 minutes put a plate on top, flip it quick and take the Stack Cooker and cone off the cake. Oh my heavenly days, this is one of those DON'T TALK TO ME WHILE I'M EATING THIS cakes. And you think I'm kidding. You're welcome for the recipe.

EARTHQUAKES AND TUPPERWARE

The people of Haiti are on my mind. They're on everyone's mind. It is hard for us to imagine what they are going through, even though we can see the extreme devastation on the t.v. and the computer. My heart aches, my eyes cry, my soul prays.

I can't help but think about what would become of my own family in the event of an earthquake. I try to stay prepared. I hope you do, too. Even a few meager supplies make all the difference in your comfort and care while you wait to get back to normal.

At the risk of sounding horrendously opportunistic, I'm glad I have the majority of my pantry stored in Tupperware Modular Mates. Even my pets supplies and medical supplies are in air tight, durable Tupperware goods. God forbid that my home would get damaged in a quake and I might lose power. I do know that my food in my pantry would still be safe to eat in case of an emergency. And it would be easy and quick to move to another location if I had to move.

I get comments about the cost of Tupperware, but it's built to last, it's guaranteed, and it keeps your food items safe, your emergency supplies (first aid, medications, etc.) in a durable container that's guaranteed not to crack, your pet items safe from insects.

Say a prayer for Haiti, hug your kids, kiss your spouse, forgive a little easier, count your blessings, then go to the Red Cross site and give. A little can go a long way for people who have nothing at all right now.

Resolutionary Road

Greetings! Wow! I guess I've been a busy bee since I have failed to blog since August of last year! Yikes! Well, a new year, a new beginning.

Every year my family and friends contemplate resolutions to their lives in the hopes that it will somehow bring them happiness or a miraculous transformation. Yeah for them! I think that you can make changes any time of the year, heck, make them in the middle of the night if you can't sleep. I would rather channel my energies into the same goals I've always had: Being healthier and more organized. I think those two seemingly elusive states of being have the greatest impact on my happiness and those I care for.


Alright, Wendy, where's the Tupper-connection in all this?!

TUPPERWAVE STACK COOKER CAKES!!

This, Ladies and Gentlemen, is Tupperware's Tupperwave Stack Cooker and it rocks! Not only is it in a gorgeous purple, it can cook an entire meal (i.e., salmon, green beans and rice) all at the same time. No messy pots and pans to clean, no heating the house up either! I made some corn bread in it the other night, but what I really want to tell you about are the cakes.
That's right, I baked cakes in the microwave today! Not rock hard cakes of death, but moist, tender cakes. Here, let me show you.....
This is the Strawberry Cake...and it IS moist. A box of yellow cake mix, a can of strawberry pie Filling (Yes, it exists. It's at Wal-Mart next to the more traditional cherry pie filling.), eggs, oil, 1 cup of water. It couldn't be easier. I served it to my family with Cool Whip and fresh strawberries and they raved. It took 12 minutes in the microwave and 15 minutes to cool in the cooker. I didn't heat the house up and everything was very easy to clean up! Love it!

Next I made a German Chocolate Cake. Because I know you all want to see every blessed step I took more pictures this time:

Here's the cooker, all lubed and sugared up, with the chocolate cake batter in it. With this cake recipe, you put the coconut and chocolate frosting in the bottom of the pan, then put the cake batter on top of it.



Here it is in my microwave, atop the inverted lid. Alright, not an exciting step, but you've gotta do it right or you'll end up with chocolate patio stones and not cake!



Here's the German Chocolate Cake in all it's gooey fabulousness. Everyone said it was moist, though next time I'll shave two minutes off the time to increase the deliciousness quotient.

So, let me reiterate: It's quick, it's easy, it's clean, it saves energy and time and your sanity. The cakes turned out moist and incredibly edible.

I'm so tickled that Fall is coming and it'll be time for soups and stews. I've posted this great video from the Tupperware website that shows Chef Stuart O'Keefe preparing a wonderful chicken soup. Not only is he charming, he cooks! Heaven help me!

Hey Paula Abdul! Tupperware's the answer!


What's Paula gonna do now? Now that she's off American Idol (big mistake for them and her, I think!) I'm stressed out with worry for how she will make ends meet, then it occurred to me: TUPPERWARE IS THE ANSWER! Hallelujah and pass the Forget Me Nots!!! Can you just picture Paula pulling out her plastic and extolling the virtues of Flat Outs?! I can! I think she'd be a hoot and a holler telling folks how she uses Modular Mates to keep her Chihuahua's kibble crunchy!! Just a few parties a month and she's pulling down the doggie dollars!! Look at the picture--she's getting all veklempt just thinking about it!
